The job of a Social Media Coordinator is one where each day is different than the last. The person needs to be able to work with numbers, help with creative content and be able to talk with anyone. In person as well as on the Internet ;)
There are three core parts to the role of a Social Media Coordinator. They are Community Management (this includes posting content, interacting with the community and gathering insights to inform future content), Client and Campaign Measurement (using tools to regularly report how each platform is doing) as well as Creative input (This is where you get to use the insights you've gathered, working with the Content Strategist, to help make the creative better).
Previous experience in social media is great. And a knowledge of which brands and platforms are doing cool things in this space is also great.
